Beef and Mushroom Bake

Ingredients

  • 1 lb lean ground beef
  • 2 TBSP margarine
  • 1/2 lb sliced mushrooms
  • 1 medium sized onion, chopped
  • 20 oz. frozen, chopped spinach, thawed & squeezed dry
  • 1 cup light sour cream
  • 1/2 tsp each: dry oregano, basil, & thyme
  • 1/4 tsp pepper
  • 1/8 tsp nutmeg
  • 1 cup (4 oz) shredded sharp Cheddar cheese
  • 1 cup (about 5 oz) grated parmesan cheese

Directions

  1. Crumble beef in 7×11 inch microwave safe baking dish(glass).

  2. Micro, uncovered, on high for 5 to 7 min., til no longer pink.

  3. Drain & remove meat from dish; set aside.

  4. Place margarine in same dish used for microwaving beef.

  5. Microwave on high, uncovered, for 35 seconds (til melted).

  6. Stir in mushrooms & onion; cover withplastic wrap.

  7. Micro, on high, 4 minutes, stirring after 2 min.

  8. Stir in beef, spinach, sour cream, spices, 1/2 cup Cheddar cheese, & 1/2 cup parmesan.

  9. Sprinkle remaining cheeses on top.

  10. Micro, uncovered, on high for 7 to 8 minutes (turn after 4 min. if needed).

  11. Let stand, cooked, for 5 minutes.
