Chipotle Salmon w/ Strawberry Mango Salsa

1 salmon fillet with 1/2 cup salsa = 368 calories, 18 grams fat
Could also grill in a grill pan inside or broil in oven

Ingredients

  • 2 TBSP brown sugar
  • 3 cloves garlic, minced
  • 2 tsp finely chopped chipotle peppers in adobo sauce
  • 1/4 tsp salt
  • 4 salmon fillets (6 oz each)
  • Salsa:
  • 2 cups chopped fresh strawberries
  • 2/3 cup chopped peeled mango
  • 1/3 cup chopped red onion
  • 2 TBSP lime juice
  • 1 TBSP minced fresh cilantro (or parsley)
  • 1 TBSP minced fresh mint
  • 2 tsp olive oil

Directions

  1. In a small bowl, combine the brown sugar, garlic, chipotle peppers & salt.

  2. Rub over salmon.

  3. Moisten a paper towel with cooking oil.

  4. Using long-handled tongs, lightly coat the grill rack.

  5. Place salmon skin side down on grill rack (or pan).

  6. Grill salmon, covered, over high heat (or broil 3-4 inches from the heat) for 5-10 minutes or til fish flakes easily with a fork.

  7. In a small bowl, combine remaining ingredients; serve with salmon.
