Sassy Chicken & Peppers

Ingredients

  • 2 boneless skinless chicken breast halves (about 4 oz each)
  • 2 tsp taco seasoning
  • 4 tsp canola oil, divided
  • 1 small onion, halved & sliced
  • 1/2 small green bell pepper, julienned
  • 1/2 small sweet red pepper, julienned
  • 1/4 cup salsa
  • 1 TBSP lime juice

Directions

  1. Sprinkle chicken with seasoning.

  2. In a nonstick skillet, cook chicken in 2 tsp oil over medium heat for 4-5 minutes on each side or til juices run clear.

  3. Remove and keep warm.

  4. Saute onions & peppers in the remaining oil til crisp-tender.

  5. Stir in salsa & lime juice.

  6. Spoom mixture over chicken.
