Heart-Smart Vegetable and Beef Stir Fry

Ingredients

  • 2 cups country-style yol-free noodles
  • 2 cups thawed Cascadian Farms frozen vegetables (or any combination you like)
  • 6 TBSP light Italian dressing, divided
  • 6 oz lean boneless beef sirloin, cut into thin strips (cut while partially frozen still)
  • 2 garlic cloves, finely chopped
  • 1 cup halved cherry tomatoes
  • 2 TBSP sliced green onion (scallions)
  • salt & pepper, to taste
  • 2 TBSP finelt shredded Parmesan cheese

Directions

  1. Boil frozen noodles in unsalted water in medium saucepan for 15 minutes.Drain; set aside.

  2. Heat a large non-stick skillet over medium-high heat.Toss frozen vegetables with 2 TBSP Italian dressing.Cook, stirring frequently, til tender (about 5 minutes).

  3. Remove veggies from pan.

  4. Add 2 TBSP Italian dressing, beef & garlic to the pan.Cook & stir til beef is browned (about 3 minutes).

  5. Stir in noodles, vegetables, cherry tomatoes, green onions & remaining 2 TBSP Italian dressing.

  6. Heat through & season with salt & pepper and sprinkle with cheese.
