White Chocolate Chip Muffins

Ingredients

  • 2 eggs
  • 1 1/2 tsp baking powder
  • 1/2 cup sugar
  • 3 1/2 oz butter, melted and cooled
  • 1/4 cup plain yogurt
  • 1 cup + 1 TBSP flour
  • White Chocolate Chips to taste

Directions

  1. Preheat the oven to 350 degrees. Butter mini muffin tins, financier tins or regular muffin tins(this will change baking time)

  2. Sift flour, baking powder and sugar together. Mix well.

  3. Beat eggs with melted and cooled butter, add yogurt.

  4. Add wet ingredients to dry.

  5. Place a small amount of batter at the bottom of the pans/tins, enough to cover the bottom.

  6. Place large quantities of white chocolate into the center and cover with remaining batter.

  7. Bake 8 to 10 minutes if using mini muffin tins, 16 to 20 if larger.
