St. Demetrios’ Dolmadakia

Ingredients

  • 3 pound ground beef, grated
  • 2 1/2 cups rice
  • 2 large onions, finely chopped
  • 8 large tomatoes, finely chopped
  • 2 small bunches dill, finely chopped
  • 2 cups mint, finely chopped
  • 1 cup olive oil
  • salt and pepper
  • juice of 6 lemons
  • grape leaves

Directions

  1. Saute the onions, meat, dill, parsley, tomatoes, salt and pepper very well

  2. Add rice and cook until the meat is brown.

  3. Stuff the grape leaves

  4. Arrange side by side in a pot

  5. Cover with loose leaves,

  6. Pour lemon juice and water to cover over the rolls

  7. Place a flat plate on the top

  8. Boil over medium heat

  9. Reduce and simmer for 1 – 1 1/2 hours

  10. Dolmadakia can be frozen at this point

  11. Thaw, bake 1 1/2-2 hours at 300 degrees

  12. Cover with Avgolemono sauce
