Breakfast on the Go Panini

Ingredients

  • 4 slices Canadian bacon
  • 2 teaspoons butter
  • 2 eggs
  • salt
  • fresh ground black pepper
  • 2 English muffins, split
  • 1 tablespoon butter, melted
  • 2 ounces cheddar cheese, sliced

Directions

  1. Preheat panini grill to high.

  2. Arrange bacon on bottom grill plate of panini grill, close the top plate and grill until crispy, 1-2 minutes.

  3. Remove and set aside; wipe grill plates clean.

  4. In a nonstick skillet, melt 2 t butter over medium heat.

  5. Crack eggs into the pan and cook until whites are set but yolks are still runny.

  6. Season with salt and pepper.

  7. Flip eggs with a rubber spatula and cook until yolks are set; remove from heat.

  8. Place muffins, cut side down on a work surface and brush crusts with melted butter.

  9. Turn muffins over and, on bottom half of each muffin, evenly layer with bacon, cheese, and egg.

  10. Cover with top halves and press gently to pack.

  11. Place sandwiches in grill, close the top plate and cook until golden brown, 3-4 minutes.

  12. Serve immediately.
