Mashed Potato Pancakes

Ingredients

  • 2 cups leftover mashed potatoes
  • 1 large eggs
  • 1-2 tablespoons butter

Directions

  1. Combine the potatoes and egg in a lrage bowl and mix thoroughly.

  2. Melt 1 tablespoon of the butter in a large frying pan over medium-high heat.

  3. For each pancake, drop 1/4 cup of the potato mixture into the pan and flatten out with the back of a spatula. Cook 3 to 4 minutes per side until brown.
