Oven-Fried Chicken

can substitute 1/2 cup bread crumbs for corn flake crumbs. Can substitute 2 chicken thigh/leg combinations for chicken breasts, and cook for 50-55 minutes instead.

Ingredients

  • 2 chicken breasts
  • 1/2 cup corn flakes crumbs
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon paprika
  • 1 teaspoon butter

Directions

  1. Preheat the over to 375 degrees

  2. Prepare a baking sheet by covering it with a layer of foil. Set aside.

  3. Trim any excess far from the chicken. If you like you can remove and discard the skin.

  4. Combine the corn flake crumbs, garlic powder, oregano and paprika in a heavy-duty paper or plastic bag. Put 1 chicken piece in the bag, close the bag and shake a few times. Remove the now-coated chicken piece and place it on the baking sheet. Coat the other piece the same way.

  5. Dot each chicken piece with 1/2 teaspoon butter. Bake chicken breasts for 40-45 minutes. The chicken is done when it gives off clear, not pink liquid when pieced with a fork.
