Stir-Fried Beef and Peppers

Ingredients

  • 1 pound lean feef, cut into paper-thin strips
  • 3 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 5 teaspoons cornstarch
  • 1/4 teaspoon sugar
  • 1/8 teaspoon ground ginger
  • 1/2 cup oil
  • 1/2 pound mushrooms, thickly sliced
  • 1 med. onion, quarted
  • 2 small green bell peppers,cut in squares or strips
  • 1/2 teaspoon salt
  • 1 can beef broth
  • cooked rice

Directions

  1. Combine soy sauce, lemon juice, cornstarch, sugar, and ginger. Add beef strips and stir, let stand while preparing vegetables.

  2. Heat oil in large frying pan. Stir fry mushrooms, onion and green peppers and salt, until vegetables are crisp tender (about 5 minutes). Lift vegetables from the oil and set aside.
  3. Stir-fry meat mixture in hot oil until it loses its pink color. Add beef broth until thickens and then add vegetables and stir until hot. Serve with cooked rice.
