Granny’s Apples and Rice

Ingredients

  • 1 1/4 cups uncooked brown rice
  • 4 tablespoons butter or 4 tablespoons margarine, divided
  • 2 1/2 cups chunky applesauce
  • 1 cup cubed apple
  • 1/4 cup packed brown sugar
  • 1 3/4 teaspoons ground cinnamon, divided
  • 1 dash salt

Directions

  1. Cook rice according to package direction.

  2. Add 2 tablespoons of butter to hot rice and stir.

  3. Mix in applesauce, apples, brown sugar, 1 1/2 teaspoons cinnamon and salt.

  4. Pour into a greased 2 quart casserole dish.

  5. Dot with remaining butter.

  6. Sprinkle remaining cinnamon evenly on top.

  7. Bake, uncovered, at 350 degrees for 35 minutes or until thoroughly heated.
