Apple and Almond Baked Pudding

Ingredients

  • 450g cooking apples ( Bramleys)
  • 50gs soft brown sugar
  • 110 gs butter (at room temp)
  • 110 gs caster sugar
  • 2 large eggs ( beaten together)
  • 110 gs ground almonds

Directions

  1. Peel core and slice apples. Place in saucepan with brown sugar and 1 tabs water. Cook slowly till softened and put in dish.

  2. In a mixing bowl cream butter and caster sugar until pale and fluffy. BEAT IN THE EGGS WHICH ARE ALREADY BEATEN TOGETHER, A LITTLE AT A TIME, TILL ALL INCORPORATED. ( I was careless and the mixture curdled) Lightly fold in almonds. Spread over apples right to edges. Bake on highish shelf for 1 hour at 180c.
