Rice Salad with Pistachios

Ingredients

  • 10 oz long grain rice
  • 30 oz pistachio nuts
  • 1/4 pt french dressing (3 parts oil to 1 part vinegar)
  • 1/4 tsp cinnamon
  • 3 oz sultanas
  • salt and pepper

Directions

  1. Cook rice, drain and rinse.

  2. Turn onto large flat dish and allow to dry.

  3. Blanch, split and chop pistachios (Mum says probably not worth bother – just chop them up).

  4. Mix rice, dressing, sultanas, cinnamon and nuts together and season if necessary.
