Strawberry Cream

Ingredients

  • 340g ripe strawberries
  • 375 litres whipping cream
  • 20g gelatine
  • 128g sugar
  • juice of 3/4 lemon
  • 3 tbsp milk

Directions

  1. Puree strawbs.

  2. Stir in sugar and lemon juice.

  3. Soak gelatine in warm water then melt into the milk and stain on to the puree.

  4. Whip the cream and stir into the pulp.

  5. Transfer to bowl or mould.
