Baked Tofu

Ingredients

  • 1 tablespoon safflower oil
  • 1 pount low fat tofu, cut into 1/2" cubes
  • 4 medium shallots thinly sliced
  • 1/2 lb sliced mushrooms (use mix of chanterelles, morels, porcini, shitake or button)
  • 1 teaspoon white petter
  • 1 clove garlic, minced
  • 1/2 cup finely chopped fresh basil
  • 1/4 cup light vegetable stock
  • 1/2 cup sake
  • 2 tablespoons brown rice syrup
  • 2 tablespoons tamari
  • 1 tablespoon arrowroot

Directions

  1. preheat oven to 375 F

  2. Coat bottom of glass casserole with oil

  3. Layer tofu, shallots, mushrooms in casserole

  4. sprinkle with white petter garlic and basil

  5. combine stock brown rice syrup tamari and arrowroot in small bowl

  6. pour over tofu mixture

  7. cover caserole loosly with foil and bake 20 mins basting tofu with marinade during cooking

  8. this casserole can be prepared ahead of time and stored in the fridge overnight before cooking
