Apple Cinnamon Whole Wheat Muffins (modified)

Ingredients

  • 1/2 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 cup oatmeal
  • 1/2 cup sugar
  • 2 teaspoons baking soda
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 cups apples, peeled and shredded
  • 1/2 cup carrots, shredded
  • 1/2 cup raisins
  • 1/2 cup walnuts or pecans, chopped
  • 1/2 cup coconut, shredded (optional add 1/2 cup nuts instead of coconut)
  • 1/4 cup vegetable oil
  • 1/2 cup milk
  • 2 teaspoons vanilla extract
  • 2 large eggs

Directions

  1. HEAT oven to 350 degrees F. Line muffins cups with paper baking cups or shortening

  2. COMBINE flours, sugar, baking soda, cinnamon and salt in a large bowl.

  3. ADD apples, carrots, raisins, walnuts, and coconut. Mix well.

  4. ADD oil, milk, vanilla, and eggs. Stir until moistened.

  5. FILL muffin cups evenly.

  6. BAKE 20 to 25 minutes or until a toothpick inserted in center comes out clean.

  7. REMOVE from pans, cool.
