Iced Rhubarb Tea

Serves 8 people

Ingredients

  • 8 stalks rhubarb, cut into 3 inch lengths
  • 8 cups water
  • 1/3 cup sugar, to taste
  • 1 sprig mint, as garnish

Directions

  1. Add rhubarb to water and bring to a boil; reduce heat and simmer for 1 hour.

  2. Strain and add sugar to taste; serve iced with mint garnish.
