Apple-Buttered Sweet Potatoes

Ingredients

  • 3 lbs sweet potatoes, peeled and cut into 1-inch pieces (about 8 cups)
  • 2 medium granny smith apples, cored and cut into wedges (may use other tart cooking apple)
  • 1/2 cup dried cherries or 1/2 cup dried cranberries
  • 1 cup whipping cream
  • 1 cup apple butter
  • 1 1/2 teaspoons pumpkin pie spice

Directions

  1. In a 3 1/2 to 4 quart slow cooker, combine the sweet potatoes, apples, and dried cherries.

  2. In a bowl, combine cream, apple butter, and pumpkin pie spice.
  3. Pour cream mixture over mixture in cooker; stir gently to combine.
  4. Cover and cook on LOW for 6-7 hours or on HIGH for 3-3 1/2 hours.
