Lemon Bars

Ingredients

  • 1 cup flour
  • 1/8 tsp salt
  • 1/2 cup confectioner's sugar
  • 1 stick butter, melted but not hot
  • 2 large eggs
  • 3/4 cup sugar
  • 1 1/2 tbsp flour
  • 6 tbsp juice from fresh lemons (usually 2)
  • 2 tsp finely grated lemon zest

Directions

  1. Adjust oven rack to lower-middle positions

  2. Heat oven to 325 degrees

  3. Spray 8×8 baking pan with cooking spray

  4. Fit 8×16 piece of heavy duty aluminum foil across pan bottom and up 2 sides as foil overhangs to pull bars from the pan

  5. Spray foil with cooking spray

  6. Mix flour, salt, confectioner’s sugar in a medium bowl

  7. Stir in butter to form dough

  8. Press dough into pan bottom (the bottom of a measuring cup dipped in flour helps)

  9. Bake until pale golden, about 20 minutes

  10. While pastry bakes, whisk eggs, sugar, flour, lemon juice and zest in a medium bowl

  11. Remove pan from oven

  12. Add lemon mixture and continue to bake until just set, about 20 minutes

  13. Let cool in pan for a few minutes

  14. Using foil handles, pull bars from pan and set on a wire rack

  15. Cool until room temperature

  16. Cut into squares and serve
