Endive Points with Apple Orange Salsa

Ingredients

  • 2 heads Belgian endive, washed and separated
  • 1 apple, diced with skin on
  • 1 orange, small dice (can substitute strawberries)
  • 2 Tbsp red onion, minced
  • 2Tbsp crumbled blue cheese
  • dash of lemon juice

Directions

  1. Combine together in a small bowl the apple, orange and onion using a bit of lemon juice to prevent darkening of apples.

  2. Prepare endive points and spread in a fan on a serving platter

  3. Just before filling add blue cheese to apple mixture and put a small amount of salsa on the end of each endive
