Spicy stew-like soup

Serves 4 people

Ingredients

  • 3 TBL canola oil
  • 1 Large yellow onion, chopped
  • 1 poblano chile seeded and chopped
  • 1 large sweet red pepper seeded and chopped
  • 2 cups chopped kale
  • 1 large jalapeno, chopped with seeds
  • 8 garlic cloves, roughly chopped
  • 10 crimini mushrooms, quartered
  • 1 TBL cumin
  • 1/4 tsp. cinnamon
  • 1 tsp. coriander
  • 1 tsp oregano
  • 1/4 tsp black pepper
  • 1 tsp orange zest
  • 1 chipotle chile from a can of chipotles in adobo
  • 1 TBL adobo from the can
  • 2 14.5 oz. cans hominy, rinsed
  • 1 14.5 oz. can chopped tomatoes
  • 5 cups chicken broth
  • meat from 3 1/2 lb. roasted chicken
  • 1/2 cup cilantro
  • 6 chopped scallions
  • 1/4 cup fresh lime juice
  • GARNISH:
  • goat cheese, crumbled
  • avocados, sliced
  • radishes, quartered
  • warmed flour tortillas

Directions

  1. put oil in six qt. pot, and add all vegetables. Cook until veggies are soft (about 15 minutes)

  2. Add spices, chopped chipotle and adobo. Turn up heat for one minute until aromatic

  3. add hominy, tomatoes, and stock. Bring to a boil, then cover and lower heat to simmer about 30 minutes

  4. Add chicken and bring to boil, then lower to simmer for another 15 minutes

  5. Stir in cilantro, scallions and lime juice

  6. Distribute to bowls and garnish
