Roasted Honey Dijon Potatoes

Ingredients

  • 1 lb potato, cut into 1 inch pieces
  • 1 small onion, thinly sliced
  • 1/4 cup Dijon mustard
  • 1/4 cup olive oil
  • 1 -2 teaspoon honey
  • 1 tablespoon chopped fresh parsley
  • salt and pepper

Directions

  1. Set oven to 375 degrees.

  2. Mix together mustard, honey, oil and salt and pepper; add to the potatoes and onion slices.
  3. Pour the sauce over potato/onion then toss well coate.
  4. Place in a greased baking pan.
  5. Bake for 35-40 minutes or until potatoes are tender.
  6. Sprinkle fresh parsley over potatoes.
