Mexican Coffee

Ingredients

  • 3/4 cup regular grind coffee
  • 2 teaspoons ground cinnamon
  • 6 cups fresh water
  • 1 cup milk
  • 1/3 cup chocolate syrup
  • 2 tablespoons light brown sugar (see note below)
  • 1 teaspoon pure vanilla extract, preferably Mexican
  • OPTIONAL:
  • whipped cream, for garnish
  • ground cinnamon, for garnish

Directions

  1. In an electric pot mix all the ground coffee with the 2 teaspoons of cinnamon in the filter basket.

  2. Add water and brew as usual.
  3. In a one-quart saucepan, mix together milk, chocolate syrup, and sugar over low heat until the sugar dissolves.

  4. Add this to the carafe of brewed coffee then stir in the vanilla.
  5. Pour into preheated cups and garnish, as desired, with whipped cream and a dash of cinnamon.
  6. (Note, use brown sugar because it enhances the flavors of both the chocolate and the coffee, much preferable over white sugar).
