Fried Brown Rice with Asparagus and Almonds

Serves 1 people

Ingredients

  • 2 T. rice vinegar
  • 1 t. sesame oil
  • 1 clove garlic, minced
  • 1/2 piece fresh ginger, grated
  • 8 asparagus spears
  • 3/4 cup cooked brown rice
  • 1/2 cup canned garbanzo beans, rinsed, drained and chopped
  • 2 T. slivered almonds, toasted
  • 2 green onions, chopped

Directions

  1. In a skillet combine vinegar, oil, garlic, ginger, and asparagus. Sauce for 5 minutes.

  2. Add cooked rice and chopped beans, saute another 5 – 7 minutes.

  3. Top with almonds and green onions
