Watermelon Gazpacho

Ingredients

  • 2 puonhds watermelon
  • 1 garlic clove
  • 1/2 oz red onion
  • 3 oz cucumber, skin and seeds removed, chopped
  • 1/2 red pepper, chopped
  • 1 oz day-old crusty bread
  • 1/3 cup Pinot Noir verjus
  • 1 - 2 T freshly squeezed lime juice
  • 1/2 c extra-virgin olive oil
  • kosher salt to taste
  • 3 - 4 large mint leaves for garnish

Directions

  1. Add all the ingredients except olive oil in a blender. Puree until smooth. slowly drizzle in the olive oil and season with salt. Serve weel chilled and garnish with mint.

  2. Makes about 6 cups
