Salsa Verde

Ingredients

  • 12 tomatillos, husked and rinsed
  • 2 jalapenos, stemmed
  • 1 onion, quartered
  • salt
  • splash of white vinegar
  • 1 tsp. cumin
  • 1/2 bunch cilantro
  • juice of lime

Directions

  1. Put tomatillos, jalapenos, and onion in sauce pan with vinegar and water to cover

  2. Bring to a boil, reduce heat, and poach until tomatillos are soft (approx 10 min). Drain.

  3. Put in blender. Add cumin and puree.

  4. Add cilantro, lime juice, and salt. Pulse to combine
