Lower Fat Banana Bread

Ingredients

  • 2/3 c. sugar
  • 1/4 c. butter or margarine
  • 2 eggs
  • 1 c. mashed bananas
  • 1/4 c. water
  • 1 2/3 c. all purpose flour
  • 1 t. baking soda
  • 1/2 t. salt
  • 1/4 t. baking powder

Directions

  1. Preheat oven to 350F. Spray 9×5×3 loaf pan with non-stick cooking spray

  2. In a medium bowl, beat sugar and margarine until smooth and creamy. Beat in eggs, water, and bananas until well blended.

  3. Mix in the flour, baking soda, salt and baking powder just until the mixture is moistened.

  4. Bake at 350F for about 60 minutes. Bread is done when the top is firm to the touch and a golden brown color.

  5. Per serving: 170 cal, 5 g fat
