Salsa Chicken

Serves 6 people

  • 6 chicken breasts
  • 2 T olive oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 jar salsa
  • 1 1/2 cup grated cheese


  1. Chop chicken breasts into large bite-sized pieces and brown in oil for 15 minutes. Pour in a jar of salsa and add garlic and onions.

  2. Cover and simmer for 30 minutes.

  3. Transfer to a glass baking dish and cool.

  4. read cheese on top, cover with foil and bake for 20 minutes at 375.

  5. Remove foil and bake another 10 minutes. Serve with rice and refried beans.
