Scallops (Marinade)

Ingredients

  • 1 TBSP extra virgin olive oil
  • 1 tsp freshly grated lime zest
  • 1 TBSP fresh lime juice
  • 1 TBSP minced garlic
  • 1/2 tsp crushed red pepper flakes
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 24 large sea scallops

Directions

  1. In a medium bowl, whisk the marinade ingredients.

  2. Rinse scallops under cold water.

  3. Remove & discard the small, tough side muscle from each scallop that has one.

  4. Place the scallops in the bowl with the marinade and toss to evenly coat them.

  5. Cover the bowl and refrigerate for 1 hour.

  6. Remove the scallops from the bowl & discard the marinade.

  7. Thread the scallops on skewers (through their sides so they lay flat) & grill over direct high heat on a grill or cook in a grill pan until just opaque in the center.
