Family Style Rigatoni

Ingredients

  • 1 medium carrot
  • 1 medium onion
  • 1 medium celery stalk
  • 15 ounces Ricotta cheese
  • 8 oz mozzarella cheese
  • 2 tablespoons oil
  • 3/4 pound ground beef
  • 3 1/2 ounces plum tomatoes
  • 8 ounces tomato sauce
  • 1/2 teaspoon sugar
  • 16 oz rigatoni

Directions

  1. Heat oven to 375

  2. Chop vegetables

  3. Slice mozzarella

  4. Heat oil and cook vegetables

  5. Add beef and cook until brown

  6. Add tomatoes, sauce, sugar and salt

  7. Heat till boiling and simmer for 5 minutes

  8. Prepare rigatoni and return to pot

  9. Reserve 1 1/2 cup sauce

  10. Stir sauce into rigatoni and pour into 4 quart baking dish

  11. Place 1/2 ricotta over rigatoni by spoon fulls

  12. Bake 30-35 minutes

  13. Top with remaining sauce and mozzarella
