Ginger Peach Margaritas

Ginger Syrup can be made ahead and frozen.

Serves 8 people

Ingredients

  • 12 oz. fresh peach puree or pureed frozen peaches
  • 4 oz. ginger syrup
  • 2 oz. lime juice
  • 6 oz. peach juice or nectar
  • 6 to 8 oz. tequila
  • 3 to 4 oz. Triple Sec or Cointreau
  • Limes slices for garnish
  • Sugar
  • Fresh ginger
  • 2 Tbsp. lemon juice

Directions

  1. Ginger Syrup: Make simple syrup using 1 c. sugar and 1 c. water. Bring to boil. Add 1/2 c. thinly sliced ginger. Simmer for 15 minutes. Cool; add 2 Tbsp. lemon juice.

  2. Place pureed peaches, ginger syrup, lime juice, and peach juice or nectar in blender and mix together. Pour mixture into a bowl and place in the freezer.

  3. When ready to serve, add tequila and Triple Sec. Combine well and serve with lime slices.
