Beach Cookies

Ingredients

  • 1/2 cup butter
  • 2 cups graham cracker crumbs
  • 1 cup canned coconut milk
  • 1/4 cup agave or maple syrup
  • 1 teaspoon vanilla
  • 1/8 teaspoon sea salt
  • 2 tablespoons arrowroot
  • 1 1/2 cup shredded sweetened coconut
  • 1/2 cup chopped walnuts, toasted
  • 2 cups chocolate chips

Directions

  1. Preheat oven to 350 degrees

  2. Melt butter and pour into 9 × 13 pan.

  3. Sprinkle graham cracker crumbs evenly into pan until bottom of the pan is completely coated in crumbs.

  4. Pat down.

  5. In a small bowl, whisk together coconut milk, agave, vanilla, salt and arrowroot.

  6. Drizzle this mixture evenly over the graham cracker layer.

  7. Sprinkle the shredded coconut into the pan.

  8. Layer the chocolate chips and nuts.

  9. Bake 20-30 minutes.

  10. Refrigerate overnight before cutting.
