creamy chicken and rice soup

Ingredients

  • cooked rotisserie chicken
  • 1/2 c. sliced carrots
  • 1/2 c. sliced celery
  • 1/2 c. sliced mushrooms
  • 1/2 c. diced onion
  • 2 cloves garlic, minced
  • 8 c. chicken broth
  • 1 pk. uncle bens long grain and wild ready rice
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 3/4 c. flour
  • 1/2 c. butter plus 2Tbs.
  • 2 c. heavy cream

Directions

  1. Remove skin from chicken. Remove meat from bones and shred. Set aside.

  2. In large pot, cook vegetables and garlic in 2 Tbs. butter until tender.

  3. Add chicken, rice, and chicken broth.

  4. Bring to a boil. Cover and remove from heat.

  5. In a bowl, combine flour, salt, and pepper.

  6. In a small sauce pan, melt butter.

  7. Slowly whisk in flour mixture until a smooth paste forms.

  8. Slowly whisk in cream until bubbly and very smooth.

  9. Whisk cream mixture into broth mixture and heat on medium until hot and bubbly.
