Maple Baked Beans

Ingredients

  • 3 slices bacon, diced
  • 1 large onion, finely chopped
  • Pinch red pepper flakes
  • 4 (15oz) cans white beans, drained and rinsed
  • 1 (14.5) can diced tomatoes
  • 2 TBLS light brown sugar
  • 2 tsp fresh thyme leaves
  • 1 c porter style beer
  • 1/2 c maple syrup
  • 2 TBLS apple cider vinegar
  • 1 TBLS Dijon mustard
  • 3 dashes hot sauce
  • Kosher salt and pepper

Directions

  1. Preheat over 375 deg

  2. Add bacon to large Dutch over over medium heat and cook unitl fat is rendered and bacon has begun to crisp

  3. Add onions, garlic and red pepper flakes and saute until tender, 4 min.

  4. Stir in beans, tomatoes, brown sugar, thyme leaves, beef, maple syrup, apple cider vinegar, dijon mustard, hot sauce, salt and pepper and bring to a simmer

  5. Remove from stovetop and bake uncovered 45 minutes until mexture begins to bubble and thicken

  6. Check at 30 minutes and add 1/2 c water or chicken broth if it looks like its getting too dry
