Vegetable Meatloaf

Ingredients

  • 2 TBSP olive oil
  • 1 Zuccinni - diced
  • 1 red bell pepper - diced
  • 1 yellow bell pepper- diced
  • 5 garlic cloves-smashed
  • 1/2 tsp red pepper flakes
  • salt and pepper
  • 1 egg - lightly beaten\en
  • 1 TBSP tyme
  • 1/4 c parsley
  • 1 1/2 lb beef/turkey - ground
  • 1 c. bread crumbs
  • 1/2 c parmesan
  • 3/4 c. ketchup
  • 1/14 c. and 2 TBSP balsamic vinegar

Directions

  1. 425 deg. oven

  2. Heat oil in pan on high heat

  3. Add zucchini, peppers, garlic and 1/4 tsp red pepper flakes.

  4. Season with salt and pepper – cook 5 min. set aside to cool

  5. Whisk egg and herbs in bowl.

  6. Add turkey, bread crumbs, cheese, 1/2 c. ketchup, 2 TBSP vinegar and veggies – mix until combined.

  7. Press mixture into pan

  8. Whisk remaining 1/4 c ketchup, 1/4 c. vinegar and 1/4 tsp pepper flakes in bowl.

  9. Brush top

  10. Bake 1 – 1 1/4 hours
