Ham and Hash Brown Casserole

Yields 8 servings, 5 weightwatcher points per serving.

Ingredients

  • 3 Tbsp. all purpose flour
  • 3/4 tsp. dry mustard
  • 1/4 tsp. pepper
  • 1 and 3/4 cup evaporated fat-free milk
  • 4 oz. light processed cheese (such as velveeta light) cubed
  • 8 oz. carton fat free sour cream
  • 1 and 2/3 cup chopped lean ham
  • 1 28 oz. package frozen cubed hash browns with onions and bell peppers, thawed.

Directions

  1. Preheat oven to 350.

  2. Place flour, dry mustard and pepper in a medium sauce pan.

  3. Gradually add the first 1/2 cup of evaporated milk while stirring with a whisk until well blended, then add the remaining 1 1/4 cup.

  4. Place over medium heat, cook until thick and bubbly, stirring constantly.

  5. Remove from heat, add cheese, stirring until cheese melts. Stir in sour cream.

  6. Combine cheese sauce, ham, and hash browns in a large bowl, stir well.

  7. Spoon mixture into an 11 × 7 baking dish coated with cooking spray.

  8. Cover and bake at 350 for 30 mins.

  9. Uncover and bake an additional 35 mins or until golden brown.
