Salted Peanut Chews

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2/3 cup light brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup unsalted butter, at room temperature
  • 1 teaspoon vanilla
  • 2 egg yolks
  • 3 cups miniature marshmellows
  • 2/3 cup light corn syrup
  • 1/4 cup unsalted butter
  • 2 teaspoons vanilla
  • 1 -10 ounce bage peanut butter chips
  • 2 cups crisp rice cereal
  • 2 cups salted peanuts

Directions

  1. eheat oven to 350.

  2. In a large bowl beat flour, brown sugar, baking powder, salt, baking soda, butter, vanilla, and eggs until crumbly.

  3. Press the mixture firmly in the bottom of an ungreased 9 × 13 inch pan.

  4. Bake for 12 to 15 minutes or until light golden brown.

  5. Immediately sprinkle marshmallows over the base.

  6. Bake 1 to 2 more minutes until the marshmallows just begin to puff.

  7. Cool.

  8. In a saucepan, mix corn syrup, butter, vanilla, and peanut butter chips.

  9. Heat over low heat, stirring constantly until the chips are just melted and mixture is smooth.

  10. Remove from heat.

  11. Stir in ceareal and peanuts.

  12. Spoon warm topping over marshmallows.

  13. Spread to cover.

  14. Refrigerate until firm.

  15. Cut into bars.
