Grouper with Pan-Roasted Tomatoes

Ingredients

  • 2 tsp paprika
  • 1 TBSP olive oil, divided
  • 1 tsp pepper
  • 1/4 tsp salt
  • 4 (6oz) grouper or other white fish fillets
  • 2 garlic cloves, minced
  • 1/2 tsp crushed red pepper
  • 1 c grape or cherry tomatoes, halved
  • 2 TBSP lemon juice
  • 1 tsp olive oil
  • 1/4 c chopped parsley

Directions

  1. combine paprika, 2 tsp oil, pepper and salt in a small bowl

  2. rub paprika mixture on both sides of fillet – set aside

  3. heat a large nonstick skillet over med.-high heat; coat pan with cooking spray.

  4. Add fish, and cook 4 min. on each side or until fish flakes from pan – keep warm

  5. place remaining 1 tsp oil in pan over med. heat.

  6. Add garlic and crushed red pepper

  7. saute until tender

  8. Add tomatoes and lemon juice

  9. cook 2 min or until mixture is hot and tomatoes begin to burst

  10. spoon tomato mixture over fish and sprinkle with parsley
