Blackened Salmon with blue cheese sauce

Ingredients

  • 1 TBSP Italian seasoning
  • 1 tsp cracked black pepper
  • 2 TBSP paprika
  • 2 TBSP salt
  • 1 1/2 TBSP cayenne pepper
  • 2 TBSP butter
  • 1 TBSP grapeseed oil, for frying
  • 4 (6oz) portions skinless and boneless salmon fillets
  • blue cheese sauce:
  • 1/2 c white wine
  • 1/2 c heavy cream
  • 3/4 c blue cheese crumbles

Directions

  1. 400 deg

  2. in small bowl, combine italian seasoning, pepper, paprika, salt, cayenne

  3. season each piece of fish with rub

  4. heat large skillet over med-high heat and add butter and oil – melt

  5. add fish adn cook 2 min. per side

  6. transfer pan to over 4-6 min.

  7. sauce:

  8. place white wine into med. sauce pan adn reduce by half.

  9. add heavy cream and allow to reduce

  10. add blue cheese and whisk smooth

  11. serve sauce on top of salmon
