Harley Pasternak’s Slimming Salmon

Serves 2 people

Ingredients

  • 1/4 c reduce sodium soy sauce
  • 2 TBSP mirin (Japanese cooking wine)
  • 2 TBSP agave nectar
  • 1 TBSP peeled and minced fresh ginger
  • 1 TBSP minced garlic
  • 2 salmon fillets (4 oz each)
  • 4 oz soba noodles, cooked

Directions

  1. In a small saucepan over med.-low heat, bring soy sauce, mirin, agave nectar, ginger and garlic to a simmer

  2. reduce heat and cook 5-7 min, stirring often

  3. allow to cool

  4. pour mixture into a resealable plastic bag and add salmon

  5. refrigerate at least 30 min

  6. preheat over to 400 deg

  7. lightly spray an ovenproof skillet, set over med-high heat and cook the salmon for 4 min. on one side

  8. turn fish, transfer skillet to the oven and cook for 4 min.

  9. serve over noodles
