Mashed Potatoes with roasted garlic

Ingredients

  • 1 1/2 lb baking potatoes
  • 7 garlic cloves, peeled
  • 1/3 c LF milk
  • 2 TBSP butter
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • chopped chives

Directions

  1. preheat 425 deg

  2. pierce potatoes several times with fork.

  3. wrap garlic in foil

  4. place potatoes and garlic on baking sheet; bake until potatoes pierce easily with fork and garlic is softened – about 45 min. – let cool until easy to handle, about 10 min.

  5. using a knife, slit potatoes open; with a spoon, scoop out pulp and place in med. bowl

  6. in small saucepan, mash garlic; add milk, butter, salt and pepper

  7. cook over low heat, stirring, until heated

  8. pour hot milk mixture over potatoes; mash together until smooth

  9. sprinkle with chives
