Speedy Leftover-Meat Mole Chili

Great for all those little leftovers that won’t make a meal otherwise. Mole is a savory Mexican spice mix that includes cocoa powder. Awesome smoky flavour!

Serves 4 people

Ingredients

  • 1 TBSP olive oil
  • 1 large green bell pepper, diced
  • 1 small onion, diced
  • 1/2 cup red wine
  • 1 can (29 ounces) mixed beans, rinsed and drained
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 cup (more or less) of cooked meat leftovers (turkey, chicken, sausage, pork, beef, hamburger, etc.)
  • 1 TBSP cocoa powder
  • 2 tsp oregano
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp chili powder
  • 1 clove minced garlic

Directions

  1. On medium heat, sauté the bell pepper and onion in olive oil in a large pot. Add wine, beans, tomatoes with juice, leftover meat, cocoa powder, oregano, cumin, coriander, chili powder and garlic. Mix well.

  2. Lower heat to a simmer, cover and cook for 1 hour or until cooked to taste.
