Enchilada Casserole

Ingredients

  • 2 cups water
  • 1/4 cup oil or bacon grease
  • corn tortillas
  • 2 yellow onions, chopped
  • 1 pkg. chili powder (Mojave brand)
  • 1 cup flour
  • 2 lbs. hamburger
  • Monterey Jack cheese
  • Black olives
  • salt and pepper
  • garlic salt

Directions

  1. In sauce pan, mix oil, flour, water, chili powder with a wire whisk. Mix flour and water together first, then slowly add it to the heated oil in pan. Bring to boil, then simmer. Once it thickens add chili powder. Keep tasting until it tastes good. Also mix salt, pepper and garlic salt. Brown hamburger and onions in skillet, drain and set aside.

  2. Lightly fry tortillas to make them soft; set aside. Grate cheese.

  3. In a pan layer corn tortillas dipped in gravy first. Then put a layer of hamburger, then cheese. Repeat. When on the last layer of cheese, top with sliced olives. Save extra gravy, people may want to add more.
