Mexican Rice

Ingredients

  • 2 tbsp. Oil
  • 2 c. rice (brown or white)
  • 1 (15 0z) can tomato sauce
  • 4 c. water
  • 1/2 c. chopped onion
  • 1 crushed garlic clove
  • 1 tsp. Salt

Directions

  1. Heat oil in Dutch oven, add rice. Stir constantly over high heat until the rice turns opaque and white. Keep stirring until the rice looks golden brown. Add remaining ingredients. Cover and cook over low heat for one hour. Don’t lift the lid or stir while cooking!!!! 6 coals bottom, 9 top.
