Persimmon Cookies

Ingredients

  • 1 cup shortening (Crisco is best)
  • 1 cup sugar
  • 1 egg
  • 1 cup persimmon pulp
  • 2 cups flour
  • 1/2 tsp. baking soda
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1/2 tsp. nutmeg
  • 1 cup raisins
  • 1 cup pecans or walnuts (optional)

Directions

  1. First, mix shortening, sugar, egg, and persimmon pulp well. Add flour, baking soda, baking powder, cinnamon, cloves and nutmeg to the first mixture very slowly. Mix well. Lastly, add raisins and nuts if desired.

  2. Drop on lightly greased cookie sheet. Bake at 375 degrees about 12 minutes.
