Lemon and Blueberry Jello Mold

Makes 12-16 servings.

Ingredients

  • FIRST PART:
  • 1 pkg. lemon Jello, small
  • 1 (9 oz) can crushed pineapple
  • 1 (8 oz) pkg. cream cheese
  • 1 small can evaporated milk
  • 1 1/2 cup hot water
  • Juice of the pineapple
  • 3 tbsp. powdered sugar
  • 1 tsp. vanilla
  • SECOND PART:
  • 2 small pkg. cherry Jello
  • 1 1/2 cup hot water
  • medium size can of blueberries
  • 1 1/2 cup hot blueberry juice

Directions

  1. FIRST PART: Dissolve lemon Jello in hot water and juice. Cool. Slowly stir in blended pineapple, cream cheese, sugar, vanilla and evaporated milk. Pour in mold. Chill until firm.

  2. SECOND PART: Dissolve cherry Jello, water and juice. Cool. Add blueberries. Pour gently over firm mixture. Chill.
