Shrimp Marinara

Ingredients

  • 2 tbsp. olive oil (or salad oil)
  • 1 clove garlic, crushed
  • 1 tsp. chopped parsley
  • 1 to 1.5 lb. raw shrimp, shelled and deveined
  • Dash of cayenne
  • 1/3 cup dry white wine
  • 1 medium tomato, peeled and chopped
  • 1 tsp. salt
  • Dash of pepper

Directions

  1. Slowly heat oil in large, heavy skillet. Add garlic; saute until golden.

  2. Add parsley, shrimp and cayenne; cook, stirring frequently for 3 minutes.

  3. Add wine; cook, covered for 3 minutes

  4. Add tomato, salt and pepper; cook, covered for 10 minutes

  5. Serve hot over rice.
