Corn and Zucchini Fritters

Ingredients

  • 1 1/2 cup flour
  • 2 tsp baking powder
  • 2 tbls butter, melted
  • 2 large eggs
  • 1/2 cup plus 2 tbls milk
  • 1/2 cup of finely chopped cooked ham (optional)
  • 1 1/2 cups grated zucchini
  • 2 cups fresh corn kernals
  • salt and pepper to taste
  • corn oil for frying

Directions

  1. Whisk together flour, baking powder, salt and pepper in a large bowl.

  2. In a separate bowl, stir together butter, eggs and milk.

  3. Stir the dry and wet ingredients together until just combined.

  4. Add ham, zucchini and corn, stir until blended.

  5. Working in batches of 3 or 4, gently drop 2 tbsp of batter into the skillet for each fritter, pressing gently with a spatula to flatten. Cook turning once, approx 2 minutes

  6. Transfer with a spatula or slotted spoon to a paper towel.

  7. Season with more salt and pepper to taste.

  8. Serve with wedges of lime.
