Seitan

This recipe is genius. I used bottled sauce, but there are also plenty of vegan Worcestershire recipes online that I’m sure would work great.

Ingredients

  • 1 1/2 cups vital wheat gluten
  • 1 teaspoon organic garlic powder
  • 1 teaspoon organic cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon lemon pepper
  • 1/2 teaspoon chili powder
  • 1 cup cold water
  • 2 tablespoon organic soy sauce
  • 2 teaspoon organic vegan Worcestershire sauce

Directions

  1. In a large bowl, mix together wheat gluten, garlic powder, cumin, salt, lemon pepper, and chili powder.

  2. In a small bowl or measuring cup, mix together water, soy sauce, and Worcestershire sauce; add wet to dry and stir until well mixed.

  3. Knead once or twice to work gluten into a ball, but no more than that. (I feel strongly about not over-working or over-cooking seitan. It’s easy to make it too tough or too dry!)

  4. Divide into 5 pieces and shape into rough discs (or whatever shape you desire).
