Chicken and Broccoli with rice

Ingredients

  • 1 pound chicken breast, cut into strips
  • 2 tablespoons oil
  • 1 can cream of chicken soup
  • 1/2 can milk
  • 2 tablespoons mustard
  • 1/2 cup cheddar or Swiss, shredded
  • 1 1/2 cups frozen broccoli, thawed
  • 2 tablespoons chopped pimento

Directions

  1. Cook and stir chicken in hot oil, until lightly browned

  2. Stir in soup, milk, mustard and cheese

  3. Add broccoli and pimento

  4. Bring to a boil and simmer for 2 minutes

  5. Pour over rice
